Hi Ted,
So, if you had a FAM ride at like 0800 hours ... you'd go out, come back, have classes ... but if you had an afternoon ride - that's it? You would have chow and your day was over?

Yep, that is correct. As Charlie said the class was split in two sections. The days training schedule should read, for instance:
Class 7 Group A
Morning 0800-1100: Familiarization ride, Location: boat basin pier 2. Instructor: ENS. George Cox USN
Lunch 1100-1300
Afternoon 1300-1600 : Characteristics of the 77' Elco PT Boat Location:Classroom 3 Instructor: LTjg. Robert R. Green USN
Class 7 Group B
Morning 0800-1100: Characteristics of the 77' Elco PT Boat Location: Classroom 3 Instructor: LTjg. Robert R. Green USN
Lunch 1100-1300
Afternoon 1300-1600 : Familiarization Ride Location: boat basin. pier 2 Instructor: ENS. George Cox USN
Then as Franks post said: if the officer student did not have to stand duty or was a duty second(stand by), it was off to dinner. I am sure they had some sort of informal night study after dinner. As for night evolutions a week was Pre-designated for this and would be stated in the training schedule. For example: Monday 21 Sept- Friday 25 Sept 1942 Night evolutions: Night Navigation/Patrol Tactis/Night Attack.
